General Tips

  1. To get the best results for searing, cut the fatcap in a cross-hatch pattern, so it will lie flat more easily.

  2. Higher temperatures will do a better job of breaking down the tough connective tissue for added flakiness / tenderness, but might make it slightly more dry.

  3. Lower temperature cooks will be more moist, but more dense and less tender.

  4. People have also had success using prepackaged corned beef and cooking it sous vide.
